I’ve made it to my last week with a preceptor at my clinical rotation! I can’t believe how fast time has gone by. Next week will be my first of two weeks conducting staff relief, which means I’ll have my own patients without any supervision from any of the dietitians. I’m so excited! I’ve learned so much over the past 8 weeks and have grown immensely; I feel like I’m ready to be on my own. I love that clinical was my first rotation, as I feel I can go into the other rotations with confidence and so much more knowledge than when I came into the program from real life experience.
Enough about me, this zucchini noodle (aka Zoodles) is an amazing lunch with some added protein or great as a quick side dish to boost up the veg content of any delicious meal. It’s light, refreshing, and super quick and easy to throw together. The combination of fiber from the vegetables and healthy fat from the avocado leaves you feeling full, satisfied, and full of energy! Avocados are made up of 71% monounsaturated fat as well as omega-3 fatty acids, both excellent for heart health. They also have a plethora of vitamins and minerals, as well as over 4 g fiber per half avocado! (For reference, women should aim to have at least 25 g of fiber per day, and men, 38 g.) The fat from the avocado also helps absorb fat soluble vitamins from other foods, such as Vitamins A, D, E, and K.
Zucchini Noodles with Avocado Sauce & Cherry Tomatoes
What you need: a spiralizer
Serving size: 1-2
Ingredients:
-1 large Zucchini
-2-3 tbsp. of extra virgin olive oil
-1/2-1 avocado, depending on how much you like!
-juice from 1/2 lemon
-about 8 cherry tomatoes, sliced in half
-2 tsp. parmesan cheese
-dash of sea salt and pepper
(optional: grated garlic or garlic powder, chili flakes)
Method:
Spiralize the zucchini and set aside. Slice the cherry tomatoes. Mash the avocado in a bowl with the back of a fork until fully mashed. Mix with the olive oil, lemon juice, parmesan, and if desired, grated garlic and chili flakes.
Serve cold by itself or with some grilled chicken, salmon, turkey, or some beans!
