This might be one of my favorite lunches ever, and it’s seriously too good and super easy to throw together or bring to work! The amazing creamy texture of avocado blends perfectly with the crisp sautéed garlicky kale and creamy basil pesto hummus. Hard boiled eggs are an excellent source of nutrition with tons of vitamin A and healthy fat, so don’t throw out those yolks! My favorite part is the fresh dill sprinkled on top. Fresh herbs really make a huge difference and are so easy to chop quickly and sprinkle on top. They give a pop of flavor without the need for any added sodium. If you sauté the kale ahead of time in a large batch you can throw this together in a pinch.
The Best Lunch Bowl
Serves 1
Ingredients:
-1 or 2 hard boiled eggs
-1/2 avocado
-3-4 large kale leaves, destemmed
-1/4 red onion, diced
-1 tsp. turmeric
-1 garlic clove
-2-3 tbsp. chopped fresh dill
-2 tbsp. hummus of choice
-1 tbsp. extra virgin olive oil
Method:
Heat the oil in a skillet, and when hot grate the garlic into the pan. Add the turmeric and sautée for 2 minutes. Chop the kale and sautée until soft. Slice the avocado into wedges and the hard boiled egg, and arrange food in a nice bowl.
