Sweet Potato Toast Three Ways

Hello and welcome to my new and improved site! New year, new big things! Cue one of the latest food trends, sweet potato toast. This is a new craze that’s been floating around the internet, so I thought I’d share my spin on it or introduce it to those of you who haven’t heard of such a thing. Sweet potatoes are one of my FAVORITE vegetables, so I knew I had to give this one a try – share my love for sweet potatoes with this Roasted Sweet Potato Salad or snack on this Sweet Potato and Cucumber Mozz Fix.

Sweet potatoes are a refreshing swap from the average wheat bread toast – and pack a large nutrition punch with higher amounts of fiber, Vitamin A, and manganese, which is an essential mineral that helps regulate blood sugar and absorb dietary calcium.  Don’t get me wrong, I love my brown rice or Ezekiel toast, but this gives a whole new vibe to a common staple. The possibilities are endless for your toppings, too.  The sweet potato adds a subtle, nice sweetness without being too overpowering and holds up well with lots of toppings (yum!).

This sweet potato toast is a great way to incorporate more whole, plant based foods into your diet this new year. What are your goals for the year? Writing them down helps to solidify them and re-reading them boosts confidence which helps you manifest them. Setting an intention, however, is just the first step. Planning out ways you will achieve your goal is crucial – the more detail the better. For example, if your main goal is to feel better, lose some extra weight and be a healthier you, creating steps that are tangible and going to help you achieve that goal each week such as planning ahead meals before grocery shopping, meal prepping one day per week, and sticking to these small goals makes the overall intention possible. Accountability and social support from loved ones or friends is crucial – tell a friend about your intentions and goals each week to help you stick to it. The new year isn’t the only time to set goals for the year – it’s always a great time to set a new goal! Now, for the very flexible Sweet Potato Toast Three Ways Recipe:

Ingredients
  1. 1 medium sweet potato, cut 1/4 inch slivers lengthwise
For the egg toast
  1. 1 egg
  2. 1 tbsp. capers
  3. 1 tbsp. parsley
  4. salt and pepper
For the tahini toast
  1. 1 tbsp. tahini
  2. 1 tsp. apricot jam (reduced sugar)
  3. 1 1/2 tsp. chia seeds
For the avocado toast
  1. 1/2 avocado
  2. 1 tbsp. pine nuts
  3. salt and pepper
  4. lime wedge
Instructions
  1. Start by cutting the sweet potatoes lengthwise into "toast" shapes - should make about 4-5 per sweet potato. Place in pop up toaster or toaster oven for 8-10 minutes, until slightly browned and crispy. Meanwhile, if making the egg toast, cook egg to desired consistency. Top with desired toppings listed above, or have fun with it and make your own creations!
Notes
  1. Give this a try with one of these three ideas or mix it up with your own toppings. To give it a little extra crispiness, place sweet potato slice with olive oil over medium heat for 3-4 minutes.
