Cauliflower – a high antioxidant cruciferous vegetable! Don’t be fooled by it’s white color. Cauliflower and other white and yellow vegetables contain anthoxanthins, a type of flavonoid with health promoting benefits. Cauliflower is also a great source of Vitamin C to keep your immunity up this time of year. Cauliflower comes in different colors, too like orange and purple. It’s similar to it’s cruciferous cousin broccoli yet grows in a head and has a more dense body. I love cauliflower because it’s extremely versatile and able to be combined with so many different flavor combinations…it’s never in vain to pick up a head of cauliflower at the grocery store.
CALLING ALL CAULI LOVERS
A blend of flavors such as honey, garlic, lemon and whole grain mustard gives roasted cauliflower a subtly sweet and savory flavor. Cauliflower caramelizes and becomes sweeter when it is roasted like many other vegetables, especially starchy. Filled with fiber, these “steaks” will satisfy your hunger paired with some high protein grains such as buckwheat and topped with hemp seeds. Add this to your batch of your plant based recipes to keep you on track this January.
- 1 head cauliflower, sliced into steaks
- 1/4 cup extra virgin olive oil
- 2 tbsp. raw honey
- 1 tbsp. whole grain mustard
- 3 garlic cloves, minced
- 1 tsp. herb de provence, dried
- 3 tbsp. freshly squeezed lemon juice
- salt and pepper, to taste
- 2 tbsp. hemp seeds
- Begin by preheating the oven to 450 degrees F.
- Clean and discard greens on cauliflower. Slice into large steaks, should make 4-5 1 inch slices.
- Whisk together olive oil with all ingredients except hemp seeds.
- Brush olive oil mixture on both sides of cauliflower steaks and place on greased baking dish.
- Bake for 20 minutes on one side, remove from the oven, flip, and bake for another 20 minutes.
- Remove from heat and serve with a whole grain and green vegetable. Top with hemp seeds and enjoy!
