I’m still holding onto summer with this fresh and fruity salsa that tastes delicious, basically on anything. There’s not much pre-prepping involved in this salsa except if you’d like to make the pickled red onions I used here, but feel free to omit this step and use fresh red onion! My garden is exploding with mint at this time of the summer so this is one of the best ways to put it to good use! (Mint and lemon water is alwaaays a good idea, too!)

Eat foods without packages, in their form as close to nature as possible. Therefore, this week’s tip was to eliminate sugar and artificial sweeteners for 5 days! This helps us to become more aware of the sugar content is processed foods and be more mindful of our sugar intake. Reducing sugar and artificial sweeteners allows the beneficial bacteria in our gut like bifidobacteria and Lactobacillus thrive to promote a healthy intestinal lining, reduced inflammation and improved metabolic processes!

Just Peachy Summer Salsa
Fresh and fruity summer salsa that tastes good on everything!
Ingredients
- 2 peaches, diced
- 1 cup cherry tomatoes, diced
- 1/2 red onion, or 1/2 cup pickled red onions
- 2 springs fresh mint, de-stemmed and finely chopped
- 1/4 cup cilantro, finely chopped
- juice from 1 lime
- pink himalayan salt to taste
- black pepper to taste
Directions
- Step 1 Start by chopping the peaches and cherry tomatoes and add to a large bowl.
- Step 2 Dice the red onion, or add pickled red onions to the bowl if available.
- Step 3 Finley chop the fresh mint and cilantro, mixing well into the salad.
- Step 4 Juice the lime and add to salsa mixture, along with the pink salt and pepper. Mix all the ingredients well.
- Step 5 Eat as is and enjoy! Or to enhance the flavor, let sit in the fridge for 2 hours or overnight!
Easy Pickled Red Onions:
1 red onion sliced into long strips, added to a jar with the juice from 2 limes, a splash of red wine or rice vinegar, and 1/2 tsp. sea salt or himalayan salt. Let sit in the fridge at least overnight to let the flavors marinate! Also gives a punch of flavor to eggs, salads, sandwiches, or anything you’d like for an extra tangy flavor and crunch!
I love this salsa as is with some high fiber crackers or tortilla chips, on avocado toast, topped over a salad, paired with eggs, or with tacos. The possibilities are endless! If you recreate this recipe, be sure to tag @freshplates on social media!
