Soups and stews are SO comforting and delicious as we head into the colder months. Creamy soups can be EXTRA comforting on chilly days. Here, I’ve created a creamy and delicious soup without the guilt attached or the added pounds. Blending the potatoes gives a smooth and silky texture along with added healthy fat from tahini. Cozy up with this bowl of deliciousness this weekend without the guilt.
SOUP’S UP.
This soup is very easy to make with a few staple ingredients – no need for hunting down extravagant foods. Broccoli, potatoes and vegetable stock come together to create warm goodness in a bowl. As you’ve read from my Broccoli Tricolored Quinoa Burgers post, broccoli is full of cancer fighting compounds and helps our bodies minimize cell damage from everyday life. The fiber from both the broccoli and potatoes will keep you fuller, longer and promotes healthy bacteria in the intestines. Tahini adds to the smooth and creamy texture of the soup, while also providing mono- and polyunsaturated fats along with 5 grams of protein per two tablespoons and 3 grams of fiber. It’s also hard to ignore the 30% of daily thiamin, 26% magnesium, 14% iron and 12% calcium all from two tablespoons of tahini. No need to be a vegetarian or vegan to enjoy this delicious and heartwarming soup! Enjoy alongside some high quality chicken, wild caught fish, or grass fed beef.
Creamy Vegan Broccoli Potato Soup
Serves 3-4
Ingredients:
-1 large head of broccoli, chopped
-5 small gold yukon potatoes, diced
-1 medium white potato, diced
-2 tbsp. tahini
-1 yellow onion, peeled and diced
-4 garlic cloves, minced
-3 tbsp. extra virgin olive oil
-2 cups vegetable broth
-1 tsp. paprika
-1 tsp. garlic powder
-1 tsp. oregano
Method:
Prepare and chop all vegetables. Heat olive oil in a large saucepan. Add garlic and onion and sautee until golden, about 3 minutes. Add the vegetable broth, broccoli and potatoes, lower heat and simmer for about 20 minutes, or until vegetables are tender. Add paprika, garlic powder, and oregano. Use an immersion blender to blend soup in pot, or pour in batches into a high speed blender and blend until smooth or desired thickness. Add vegetable broth if soup to thin out soup as desired. Stir in tahini until mixed thoroughly. Top with red onions, oregano, and edamame beans for added punch of plant protein!
