This is a delicious take on a comfort food staple: pasta! There is truly nothing like a nice bowl of pasta that satisfies the soul. And you don’t have to give up your pasta to stay on track! In this case, I used brown rice pasta to increase the nutrient content of the dish instead of white pasta and the creaminess from the avocado gives it an amazing texture and a great dose of healthy monounsaturated fats.
Creamy Basil Avocado Pasta
Serves 6
Ingredients:
– 1 1/2 lb. of uncooked brown rice/quinoa based pasta
– 2 avocados
– 2 tbsp. store bought hummus (or 1/4 can of chickpeas, rinsed)
-1/4 cup extra virgin olive oil
-1 cup of fresh basil
– 1 cup of cherry tomatoes, halved
– juice of 1/2 lemon
-salt and pepper
Method:
Cook pasta according to pasta directions. While cooking, mix all ingredients except tomatoes in a good blender or food processor until smooth. Add the cherry tomatoes and pulse a few times until they are chopped a bit but not processed fully. Mix into the brown rice pasta, and enjoy!
