I’m still holding onto summer with this fresh and fruity salsa that tastes delicious, basically on anything. There’s not much pre-prepping involved in this salsa except if you’d like to make the pickled red onions I used here, but feel free to omit this step and use fresh red onion! My garden is exploding with mint at this time of the summer so this is one of the best ways to put it to good use! (Mint and lemon water is alwaaays a good idea, too!)

I’m so excited to share these delicious and seemingly decadent bites with you all! They make an amazing afternoon snack or nighttime dessert. They’re full of healthy fats that are nourishing, satiety inducing, and hormone balancing. The maple syrup gives a nice sweetness without being overbearing, and the higher healthy fat content helps to reduce the rate of glucose absorption, creating a more steady release of insulin and no sugar crash later! Ok you guys, I’m so excited to share these simple (and wholesome) Raw Cookie dough bites with you! I stumbled upon Hail Merry’s Cookie dough bites and knew I had to try to re-create a version for the blog arsenal. Made with 6 simple ingredients and no baking required, these bites are great for anyone to whip up – even if you feel a bit rusty in the kitchen! Spicy Turmeric Roasted Chickpeas

Hi, guys! I hope you’re all having a fabulous start to the week. I wanted to share one of my favorite recipes for meal prepping that’s so versatile. Roasted chickpeas are awesome as a snack, added to salads or even main dishes to boost the nutritional content. This spicy version has a delicious kick to take any meal up a notch. As you can see from most of my recipes,   I LOVE using chickpeas in all different types of ways – mashed into hummus, roasted, or just plain on top of salads. They’re full of fiber to aid in digestive health and helps rid the body of cholesterol. Chickpeas are also a good source of plant based protein – especially combined with a grain such as rice. Beans and grains are incomplete proteins, but when eaten together become “complete.” This doesn’t have to be in the same meal, but same day is best!

Sun Dried Tomato & Rosemary Baba Ghanoush

Baba ghanoush is a delicious dip made with roasted eggplants, if some of you do not know! It has such an amazing texture from the roasted eggplant and olive oil.  Many recipes call for tahini, but this version is sans tahini and just as amazing.  The sun dried tomato and rosemary really give a punch of flavor.
