I’ve made it to my last week with a preceptor at my clinical rotation! I can’t believe how fast time has gone by. Next week will be my first of two weeks conducting staff relief, which means I’ll have my own patients without any supervision from any of the dietitians. I’m so excited! I’ve learned so much over the past 8 weeks and have grown immensely; I feel like I’m ready to be on my own.  I love that clinical was my first rotation, as I feel I can go into the other rotations with confidence and so much more knowledge than when I came into the program from real life experience.  (more…)

Simple Arugula, Avocado & Egg Salad with a Ginger Dijon Dressing

I love sprucing up a super easy salad with a delicious and also easy dressing! Making the dressing in a large batch ensures that you have an amazing and healthy dressing for the rest of the week at your fingertips.  I love making it in a big jar and storing it in the fridge. Arugula is such a crisp and delicious leaf and takes any normal salad up a notch. Added peppers give beautiful contrasting color and amazing antioxidants.  The star of healthy fats (avocado) and poached eggs complete the meal (this is great for Meatless Monday!)

This might quite literally be what summer tastes like. The fresh zucchini, bright citrus, sweet apricot and creamy avocado flavors blend beautifully to create a summer stunner. It feels like the summer is zooming by so I wanted to stop and appreciate all of the scents and flavors that the peak of summer has to offer.  I love using a spiralizer to turn zucchini into spaghetti! You really still get the feel that you are eating pasta yet you’re eating one of the most nourishing vegetables: so healthy and packed with fiber that’s great for your digestive system.

This might be one of my favorite lunches ever, and it’s seriously too good and super easy to throw together or bring to work! The amazing creamy texture of avocado blends perfectly with the crisp sautéed garlicky kale and creamy basil pesto hummus. Hard boiled eggs are an excellent source of nutrition with tons of vitamin A and healthy fat, so don’t throw out those yolks! (more…)
