Hi friends, happy June! I’m sure you’re as ready as I am for more time for outdoor activities and fun in the sun. I’m craving all the fresh foods and salads as the weather warms up, yet still craving some of my favorite flavors – hence this Chipotle Turkey & Quinoa Taco Salad! It’s packed with colorful veggies, fiber, protein, and healthy fat (a fully balanced meal) to help keep you satisfied for hours after! Hi guys! I hope you’re having a great week. I can’t believe January is almost over! With the first month of the year almost gone by, have you stopped to re-evaluate your 2018 resolutions and goals? Now is a good time to check in with yourself, see what you need to work on and move forward with new and specific goals for the next month (this works better than yearly goals, in my opinion). Roasted Sweet Potato Salad with Balsamic Tahini Glaze
Can you say delicious? This was one of my favorite recent creations and I can’t stop making it! It’s so satisfying as a meal – sweet potatoes are full of fiber along with the chickpeas and lentils which also are filled with plant based protein. The balsamic tahini glaze also has hints of honey and dijon mustard giving an all around great flavor. (more…)

Kale salad with spiralized apple, walnuts and avocado with a balsamic glaze
This bright and vibrant salad was perfect on this snowy day in New York. We unexpectedly got hit with a big snow storm! Perfect chance to get some exercise shoveling or frolicking in the snow. This salad was so delicious and all of the flavors paired together nicely. The sweet crisp apple noodles, creamy avocado, crunchy walnuts, and nutty flavor from the quinoa all blended amazingly. “Massaging” the kale first with oil, salt and pepper helps to break down some of the tough cell walls, making the leaves softer and more easily digestible. Batch cooking a bunch of quinoa early in the week makes it easy to just throw some quinoa in from the fridge, already pre-cooked! (more…)
