An easy, cozy new recipe for you all! I love simple, and this crock pot chili recipe is just about as easy it can get on these cold winter days. I use ground chicken instead of the traditional beef (I recommend grass fed organic beef if you are choosing beef!) and used black beans as my legume of choice. Feel free to mix it up with what you have on hand (i.e. ground turkey, kidney beans, chickpeas, etc.!)

Cauliflower – a high antioxidant cruciferous vegetable! Don’t be fooled by it’s white color. Cauliflower and other white and yellow vegetables contain anthoxanthins, a type of flavonoid with health promoting benefits. Cauliflower is also a great source of Vitamin C to keep your immunity up this time of year.  Cauliflower comes in different colors, too like orange and purple. It’s similar to it’s cruciferous cousin broccoli yet grows in a head and has a more dense body. I love cauliflower because it’s extremely versatile and able to be combined with so many different flavor combinations…it’s never in vain to pick up a head of cauliflower at the grocery store.

Here’s my take on a traditional Italian dish – pasta and meatballs. I can’t tell you how much I enjoyed the texture of these meatballs – and they even look like real meat. Lentils are a great meat substitute and are full of fiber and protein. 1 cup of cooked lentils contains 18 GRAMS OF PROTEIN! Thats only 3 grams less than a 3 oz. serving of meat. 1 cup will also provide 20% of your daily intake of potassium which is great for blood pressure, and a whopping 36% of daily iron.
