Banana bread has always been one of my all time favorite treats. However, many variations are loaded with refined sugar and not so healthy ingredients and oils. I wanted to create a clean version and I love how easy this is to mix in two bowls and pour into a loaf pan and come back to some amazing and delicious bread.
It’s also gluten free, refined sugar free, and dairy free! I used buckwheat which is such a healthy whole grain with lots of fiber. The bread is slightly sweet but not too overbearing– I love it warm with some natural almond butter and sprinkled with some raisins!
Buckwheat Banana Raisin Bread
Serves about 6 (1 medium sized loaf)
Ingredients:
-1 1/4 cup organic buckwheat flour
-3 bananas, mashed
-1 egg
-1/4 cup coconut oil, melted
-1/4 cup organic agave nectar
-1/2 tsp. cinnamon
-1/8 tsp. nutmeg
-1/4 cup raisins
-1/4 cup slivered almonds
-1/2 tsp. salt
-1/2 tsp. baking soda
-1 tsp. baking powder
Method:
Preheat the oven or toaster oven to 350 degrees F. Melt the coconut oil in a small saucepan. In a large bowl, mash the bananas. Add the egg, raisins, agave nectar, and melted coconut oil and mix well. In a separate bowl, mix the flour, almonds, baking powder, baking soda, cinnamon, nutmeg, and salt. Add the wet ingredients to the dry ingredients and mix well. Pour into a medium sized loaf pan lined with wax paper and greased with more coconut oil. Bake for about 40 minutes. Remove wax paper with loaf from baking pan and let cool for 5-10 minutes before enjoying!
