Easy Citrus Slaw Salad
Hi guys! I have a #FRESH summer salad for you to try – and it’s a good one! It’s full of fiber and prebiotics, which is food for our beneficial gut microbes to thrive. This slaw salad makes a great base for any meal to enjoy with protein, or by itself for a quick and healthy light lunch! The flavors are bright with apple cider vingar, citrus, fresh mint, and a touch of extra virgin olive oil.
Ingredients ready! Shredded green cabbage, sliced persian cucumber, sliced rainbow radishes, and prepping the orange for slicing and juicing into the salad!
This is definitely one of my recent favorites and I’ll be making it on repeat for the rest of the summer. I love getting pre-cut cabbage to make this even easier (Trader Joe’s has a nice size bag!) Prepping the day before makes this salad even better and allows all of the flavors to marry together and the veggies to soften slightly. Easy, crunchy slaw salad with bright notes of citrus and mint.

Ingredients
  • 1 large head of green cabbage, thinly sliced, or 1 bag or pre-shredded green cabbage
  • 1 avocado, diced
  • 1 cup radishes, sliced thin
  • 1 persian cucumber, chopped small
  • 1/4 cup raw pumpkin seeds
  • 1/2 tsp. pink himalayan salt
  • black pepper to taste
  • 1/2 cup apple cider vinegar
  • juice from 1/2 fresh orange, squeezed
  • 3 tbsp. extra virgin olive oil
  • 1-2 sprigs of fresh mint
Directions
  • Step 1 Start by chopping the green cabbage, if not pre-shredded and add to a large salad bowl.
  • Step 2 Add the salt, vinegar and olive oil to the salad and let sit in the fridge while you prep the rest of the ingredients.
  • Step 3 Chop the cucumber and radishes, dice the avocado and finely dice the fresh mint.
  • Step 4 Halve the orange and save half for juicing. Slice a few slices to top the salad. Remove the cabbage from the fridge which will be slightly softened. Add all ingredients to the cabbage, vinegar and olive oil mixture and mix the slaw salad well, topping with the sliced oranges and chopped fresh mint.
  • Step 5 Eat as is and enjoy! Or to enhance texture and flavor, let stil in the fridge for 2 hours or overnight. If choosing to store in the fridge for later, omit the avocado and add to the salad when serving!
