Ok you guys, I’m so excited to share these simple (and wholesome) Raw Cookie dough bites with you! I stumbled upon Hail Merry’s Cookie dough bites and knew I had to try to re-create a version for the blog arsenal. Made with 6 simple ingredients and no baking required, these bites are great for anyone to whip up – even if you feel a bit rusty in the kitchen! The only wait time is about an hour in the refrigerator to let the “batter” firm up.
6 basic ingredients include:
CHICKPEAS (YES I SAID IT)
RAW HONEY
ORGANIC VIRGIN COCONUT OIL
ALMOND FLOUR
HIMALAYAN SEA SALT
70% DARK CHOCOLATE
That’s it folks! You may be wondering how I actually squeezed in chickpeas in this recipe? Do you know who I am?! Chickpeas are my literal jam and give me life. They provide fiber to keep digestion running at an optimal level as well as plant based protein (more on plant powered protein here). They’re also great for balancing blood sugar and provide phytonutrients. The chickpeas, coconut oil and almond flour are the perfect combination of binding agents to create these delicious “cookie dough” bites. Obviously had to include some chocolate in there, too. Look for high percentage of cocoa which equals less sugar added, the higher percentage of chocolate. With this recipe, you won’t be missing the white cane sugar laden version!
- 1 15 oz. can of chickpeas (low sodium), drained and rinsed
- 1/4 cup organic virgin coconut oil
- 1/4 cup almond flour (not meal)
- 1/4 cup raw honey
- 1/4 tsp. pink himalayan sea salt (or regular sea salt)
- 3 oz. 70% dark chocolate, chopped into small chunks
- First, rinse the chickpeas. Add to food processor with coconut oil.
- Pulse until thoroughly combined. Add rest of ingredients besides the chocolate and blend until smooth.
- Add the chocolate pieces and pulse to combine with batter, but do not puree into mix. You still want chunks of chocolate.
- Place batter in air tight container in the fridge for at least one hour.
- Roll batter into bite size balls, makes about 10-14 depending on the size you like. Enjoy as is or place back into the fridge for 1 more hour to solidify in this shape!
- Coconut oil should be solid, not melted.
- Can substitute pure maple syrup for the raw honey.
