Tuna is one of those lunches that can either make or break your healthy routine. Traditional tuna packs a big punch with added polyunsaturated fats from mayonnaise, but switching for avocado will give you the good healthy fats your body craves more of and loves. Avocado still gives you the creamy texture you expect from tuna salad and the flavor doesn’t disappoint! If you aren’t big on trying different spices you could easily make this with avocado, lemon juice and extra virgin olive oil. This is a great lunch wrapped in a lettuce wrap, on a whole grain piece of toast, or plain with some carrots and tomatoes.
Curried Avocado Tuna
Serves 2
Ingredients:
-1 can of mercury purified tuna packed in water
-1 avocado
-1 tbsp. extra virgin olive oil
-juice from 1/2 lemon
-1 tbsp. curry powder
-1 tsp. garlic powder
-salt and pepper to taste
Method:
Mash all ingredients together with the back of a fork, and squeeze some more lemon juice on top!
