Hi guys! I hope everyone had a happy Valentine’s day! I know mine was filled with so much love (& YES chocolate!!). I created this simple and delicious white bean salad with pesto to fill my needs for some delicious nutrition via beans and veggies. This dish is quick to make and provides tons of nutrients and fiber to help keep you oh so satisfied yet feeling light and ready to take on the day. Pesto gives such a nice flavor to any dish – basil is my absolute favorite! Walnuts give a delicious crunch and a dose of heart healthy fats. They’re also great for balancing blood sugar as your body processes carbohydrates. You won’t be disappointed with the flavor combo in this simple cold bean salad.
Simple Pesto White Bean Salad
Simple bean salad thats a great topper over a bed of greens.
Ingredients
- 1 14.5 oz. can of white beans or cannellini beans
- 1 handful of fresh baby spinach
- 1/2 cup cherry tomatoes, halved
- 1/4 cup walnuts, roughly chopped
- 1.5 tbsp. pesto (made with olive oil)
- 2 tbsp. red wine vinegar
- sea salt and pepper to taste
Directions
- Step 1 Drain and rinse the beans in colander.
- Step 2 Chop cherry tomatoes and roughly chop walnuts.
- Step 3 Combine all ingredients in a large bowl. Toss well to make sure spinach is fully coated.
- Step 4 Enjoy as is or top over more greens!
