This Quiche is sure to be a crowd pleaser! I have always loved a great quiche but I wanted to create a lightened up version without all of the white flour. The entire crust is made purely from cooked quinoa. While many believe quinoa is a grain, it is actually a seed. It has a nutty texture and flavor and is high in protein, fiber, iron, and magnesium. It still creates a crispy crust that won’t disappoint!
Quinoa Crusted Spinach and Feta Quiche
Serves 6-8
Ingredients:
-2 cups of quinoa (already cooked according to package directions)
-6 eggs
-1/2 onion, chopped
-2 cups raw baby spinach
-1/2 tsp. turmeric
-1/2 cup 1% milk
-1/8 tsp. cayenne pepper
-1/4 cup of feta cheese
-salt and pepper
Method:
Preheat oven to 375 degrees F. Mix cooked quinoa with 1 egg and press into a greased pie dish. Bake for 20 minutes. While that’s baking, sauté the onion with turmeric, about 3-4 minutes until golden. Add the baby spinach and sauté until wilted. Remove the crust from the oven and place the spinach mixture on crust. Whisk the remaining 5 eggs, milk, cayenne, salt, and pepper and pour over quiche. Top with feta. Bake for another 35 minutes. Allow to cool about 5 minutes before slicing!
